Ingredients:
- 2 cans Fayrouz pineapple
- 2 whole chicken (1300 gm)
- 5 tablespoons tomato paste
- 1 teaspoon sugar
- 1 teaspoon vinegar
- 3 teaspoon Worcestershire sauce
- 2 cups tomato juice
- 2 minced garlic cloves
- ½ teaspoon cumin
- 2 cloves
- Pinch of thyme
- Pinch of nutmeg
- Olive oil
- Salt & pepper to taste
Directions:
- Place olive oil, garlic, thyme, cumin, cloves in a pan.
- Add in tomato juice & stir well over medium heat.
- Add in the tomato paste, salt, pepper & Worcestershire sauce and sugar. Let the mix cook for 15 mins.
- Add in 4 tablespoons of Fayrouz pineapple and stir in chicken after rubbing it well with the mix.
- Stuff the chicken with onions, tomatoes, olive oil, salt & pepper.
- Heat Fayrouz + chilli peppers in a pan. Let simmer for 10 mins, then remove pepper.
- Add Fayrouz mix to the chicken and place in oven for 1 hr 1/5 mins at 180 ° C.
- Serve with mashed potatoes or French fries.
